Roasted Frozen Cauliflower Rice

This roasted frozen cauliflower rice is a quick and easy way to achieve a light, fluffy texture with a deliciously nutty flavor. Perfect as a rice substitute, it bakes in the oven for a hands-off, customizable side dish that pairs well with any meal!

Ingredients

  • 12 oz. Bag Frozen Cauliflower Rice sub with frozen cauliflower pieces
  • 2 tsp Olive Oil
  • 1/2 tsp Black Pepper

Optional Seasonings

  • 2 Garlic Cloves minced
  • 1/2 tsp Paprika

Instructions

  • Preheat the oven to 375 F.
  • Before opening the bag of frozen cauliflower rice, use your hands to break up any lumps or chunks. If using frozen cauliflower pieces, place them into a food processor and pulse until they are "riced".
  • Add the frozen riced cauliflower to a mixing bowl and toss well with the olive oil, salt, and pepper. Add in any additional herbs and spices here if desired.
  • Place all of the frozen riced cauliflower onto a large baking sheet and spread it out in a thin layer across the pan to ensure even cooking.
  • Bake for 15 minutes, tossing halfway through and roast until its heated through and the moisture has evaporated.
  • Remove from the oven and serve as a side dish or use as desired.

Notes

Make it a meal prep staple! Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for later.
