This Homemade McDonald's Breakfast Burrito recipe recreates the fast-food classic with a flavorful blend of scrambled eggs, sausage, melted cheese, and fresh veggies, all wrapped in a soft tortilla. Perfect for a quick and satisfying breakfast, it's a delicious way to start your day with a homemade twist on a fast-food favorite.
Optional- Cook 2 cups of frozen tater tots or hashbrowns according to package directions and set aside.
In a large skillet over medium heat, cook the ground pork sausage until no longer pink. Add in the diced red pepper and green onions and continue to cook and sauté the sausage until it is fully browned and the veggies are tender.
Remove the sausage mixture from the pan and let it drain on a paper towel lined plate and set aside.
Beat the dozen eggs well in a large bowl. In the same pan over medium-low heat, add the butter and let it melt and coat the pan.
Pour the eggs into the pan and begin to cook and scramble. When the eggs are 3/4th of way set, add in the 2 cups of shredded cheese, salt, and pepper. Continue to cook and scramble until the eggs are set and the cheese is melted throughout.
Pour the cooked eggs and the cooked sausage mixture into a large mixing bowl (or toss it all together in the skillet off the heat if you don't want to dirty another bowl). Mix and combine everything very well.
Assembly and Folding
Place one large tortilla down onto a cutting board. Add about 1/2 cup or so of the sausage and egg mixture into the center of the burrito, leaving space around the edges. Add in 1/4 cup of tater tots over the top spread evenly.
Fold the sides of the tortilla inwards over the filling, creating two straight edges that will help keep everything inside. With the sides folded in, fold the bottom of the tortilla up over the filling, tucking it tightly as you go. Continue rolling the burrito upwards until it's completely wrapped, making sure the filling stays securely inside. Press gently to seal
Optional- Toasting the Burritos
Place a dry frying pan over medium heat and allow it to warm up for about 1-2 minutes. Once the pan is hot, carefully place your wrapped burrito seam-side down in the pan.
Toast the burrito for 2-3 minutes on the seam side until it's golden brown and sealed shut. Flip the burrito and toast the other side for an additional 2-3 minutes, until both sides are evenly golden and crispy.
Remove the burrito from the pan, let it cool slightly, and enjoy!

Freezing Directions:
Cool the Burrito: Allow the freshly made burrito to cool completely before freezing.
Wrap in Foil: Wrap each burrito tightly in aluminum foil, ensuring no part of the burrito is exposed. This helps prevent freezer burn and keeps the burrito fresh.
Label and Freeze: Place the wrapped burritos in a resealable freezer bag or airtight container, label them with the date, and store them in the freezer for up to 3 months.
Reheating Directions:
Preheat Oven: Preheat your oven to 350°F (175°C).
Bake in Foil: Place the foil-wrapped burrito directly on the oven rack or a baking sheet.
Reheat: Bake the burrito for 30-35 minutes if reheating from frozen, or 15-20 minutes if reheating from thawed, until the burrito is heated through.
