Ingredients
1lbPastashort cut noodles work best
1cupTurkeydiced or shredded
1cupSalamidiced
1cupPepperonidiced
8ozProvolone Cheese diced or shredded
4cupsRomained Lettuce shredded
1mediumRed Oniondiced small
1cupCherry Tomatoeshalved
16oz.Pepperoncini Peppers sliced thin
Dressing
1cupMayouse a light mayo if you prefer
1cupOlive Oil
1/3cupRed Wine Vinegar
1cupParmesan Cheesegrated
2tspItalian Seasoning
2tspBlack Pepper
1tsp Red Pepper Flakes
Instructions
Dressing
Combine all the dressing ingredients into a bowl and whisk well until combined. Taste test and adjust seasonings as needed and set aside.
For The Pasta Salad
Prepare the pasta according to package directions. Once cooked, drain well in a colander and then rinse with cold water. Let it sit to strain any excess water.
Combine the cooled, cooked pasta in a large bowl with the diced turkey, salami, pepperoni, provolone, shredded lettuce, diced onion, pepperonici peppers and tomato halves. Mix well.
Pour the dressing over the top and toss very well until combined.
Serve immediately or store in the fridge. This pasta salad will only taste better with time but is best when eaten within 4-5 days.
Notes
You can sub out the meats for other Italian style deli favorites like capicola, mortadella, or prosciutto.
