Grinder Pasta Salad Recipe

Enjoy the flavors of a classic grinder sandwich mixed with a delicious al dente pasta salad. With crispy lettuce and delicious cuts of salami, turkey, and capicola all tied together with the creamy parmesan dressing. This is the perfect pasta salad dish for serving to a crowd!

Ingredients

  • 1 lb Pasta short cut noodles work best
  • 1 cup Turkey diced or shredded
  • 1 cup Salami diced
  • 1 cup Pepperoni diced
  • 8 oz Provolone Cheese diced or shredded
  • 4 cups Romained Lettuce shredded
  • 1 medium Red Onion diced small
  • 1 cup Cherry Tomatoes halved
  • 16 oz. Pepperoncini Peppers sliced thin

Dressing

  • 1 cup Mayo use a light mayo if you prefer
  • 1 cup Olive Oil
  • 1/3 cup Red Wine Vinegar
  • 1 cup Parmesan Cheese grated
  • 2 tsp Italian Seasoning
  • 2 tsp Black Pepper
  • 1 tsp Red Pepper Flakes

Instructions

Dressing

  • Combine all the dressing ingredients into a bowl and whisk well until combined. Taste test and adjust seasonings as needed and set aside.

For The Pasta Salad

  • Prepare the pasta according to package directions. Once cooked, drain well in a colander and then rinse with cold water. Let it sit to strain any excess water.
    Cooked Pasta
  • Combine the cooled, cooked pasta in a large bowl with the diced turkey, salami, pepperoni, provolone, shredded lettuce, diced onion, pepperonici peppers and tomato halves. Mix well.

  • Pour the dressing over the top and toss very well until combined.

  • Serve immediately or store in the fridge. This pasta salad will only taste better with time but is best when eaten within 4-5 days.

Notes

You can sub out the meats for other Italian style deli favorites like capicola, mortadella, or prosciutto.
