Equipment

  • Griddle Pan optional

Ingredients

Greek Chicken Burgers

  • 1 lb Ground Chicken
  • 1 Shallot finely diced
  • 1/4 cup Fresh Dill finely chopped
  • 1/4 cup Feta crumbled
  • 1/3 cup Bread Crumbs
  • 1/2 tsp Salt
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Dried Thyme

Mediterranean Relish

  • 1/2 cup Tomato seeds removed, diced small
  • 1/2 cup Cucumber diced small
  • 1/2 cup Kalamata Olives pitted, diced small
  • 2 tbso Fresh Dill
  • 1 tsp Lemon Juice
  • 1 tsp Olive Oil
  • 1 pinch Salt

Additional Toppings

  • 3 Pita Breads or burger buns
  • Romaine Lettuce
  • 1 cup Tzatziki Sauce

Instructions

  • Make the Chicken Patties: In a large bowl, combine ground chicken, diced shallot, dill, crumbled feta, bread crumbs, and seasonings (salt, oregano, garlic powder, onion powder, and thyme). Mix just until combined (don’t overwork the mixture). Form into 3 evenly sized patties. Chef's Note- If grilling directly on the grates, allow the chicken to chill in the freezer for 15 minutes.
  • Make the Mediterranean Relish: In a small bowl, combine diced tomato, cucumber, olives, dill, lemon juice, olive oil, and a pinch of salt. Toss gently to combine.
  • Preheat the Grill or Griddle: Preheat your grill or griddle pan over medium-high heat. Lightly oil the surface to prevent sticking.
  • Grill the Patties: Cook chicken burgers for about 5–6 minutes per side, or until fully cooked (internal temperature should reach 165°F). Remove from heat and let rest for a few minutes.
  • Assemble the Burgers: Warm pita breads slightly on the grill or in a pan if desired. Place a few romaine lettuce leaves on the bottom of each pita, top with a grilled chicken patty, a generous spoonful of tzatziki, and a scoop of Mediterranean relish.

Notes

Chicken needs to reach 165°F to be fully cooked. Use a meat thermometer to make sure your burgers are safe and juicy.
