This recipe is NOT hard, but there are some general tips and techniques to pulling off low and slow BBQ on a gas grill....

How to create smoke? I like to use a smoke tube (they're $15 on Amazon). This will need to be refilled throughout the cook.

You can also use wood chips and foil packets. Do NOT soak them. Soaking creates steam not smoke. More details linked below.

Because this is generally a LONG cook (16-20 hours). Go with a pork butt roast so you get it closer to 6-8 hours instead.

Get the roast on the grill on indirect heat. My left burner is the only thing creating heat. The grill sits around 250 - 275 F. Use a thermometer to track the internal temperature.

When you hit around 155-165 F. wrap it tightly in foil to help speed up the process. When it reaches 195-203 F it's ready to be pulled.

Remove the bone and any large pieces of un-rendered fat. Let the pork butt roast rest, then shred with gloved hands or two forks.
