Start with a thicker cut bacon.

Line a baking sheet with foil and add the bacon. Season with pepper.

Make the candied syrup with your favorite low carb sweetener

I also add a little bourbon for flavor, but it can be left out.

Coat the bacon on both sides with the syrup mixture and bake at 400 F.
