Cooking Tools – Sharp Knife and Cutting Board – Spray Bottle – Foil Pan/ Tray – Thermometer – Cooling Rack – Butchers Twine

Start with a whole pork loin roast. Trim any silver skin or large pieces of fat.

If yours has a nice fat cap, leave it on and crosshatch. Mine did not have much so I decided to use twine.

Cover the entire loin roast in a binder (I used yellow mustard).

Then add your favorite rub!

The twine helps keep the roast nice and round. Place over a foil pan and preheat your smoker.

A 3 lb. roast will need to cook until it hits 145 F. about 2-3 hours or so at 250 F.

Pull it off your smoker and let it rest before slicing.
