How do I get crispy skin?

Crispy skin occurs where there is an absence of moisture. Pat the skin dry and use salt to dry brine it overnight uncovered. 

Add your favorite BBQ rub and coat on all sides and rest 30 minutes.

Start by smoking on the grill at a medium temperature (350 F) to render the fat while getting crispier skin.

Crank the heat to 425 F the last 30-45 min to get the skin to set and the fat to render. Total time is under 3 hours typically.
