Gather your ingredients to prep the pasta salad. I use a short cut pasta, shredded lettuce, tomatoes, red onion, and pepperoncini peppers as the base of the salad. 

Begin by cooking your short cut pasta to al dente per the package directions. Drain and cool by running it under cold water. Let it dry and set aside. 

Cut the salami, capicola, and turkey into pieces. Add in the shredded cheese and veggies to the cooked pasta salad. Toss to combine. 

Next, add in the shredded romaine lettuce. Mix again until everything is is well tossed to combine and then prepare the dressing. 

Making the homemade dressing you will need mayo, olive oil, red wine vinegar, parmesan cheese, and salt, pepper, red pepper flakes, and Italian seasoning. I also like to use fresh garlic. 

Combine all the dressing ingredients into a mixing bowl. Whisk well to combine and check the consistency and seasonings and adjust as needed. 

Pour the dressing over the pasta salad mixture and coat all of the pasta and antipasto mixture until fully combined. 

Chill in the fridge or serve immediately. This makes a great side dish, main dish, meal prep, or great for entertaining for parties and potlucks. Full details linked below!
