Add a binder (I used mustard) to help my dry rub stick. This should be a very thin layer. You can also use olive oil or BBQ sauce.

Next, coat your pork loin with your favorite BBQ dry rub. It should be a light, even coating on all sides, top and bottom as well.

Preheat your grill to 225 F. I tied my roast with twine to keep the shape nice and round and placed over a pan for ease while cooking.

Smoked and spritz your meat as needed until it reaches an internal temperature of 140-145 F.

Remove from your smoker and let it rest 10 minutes before slicing into thin pieces. Make sure to remove the twine if you used this method.
