Start by making your spice mole spice blend. You will need this for the sauce and the pork tenderloin

Next, prep your easy mole inspired sauce. This is a quicker version that you can make (not a traditional mole).

I prep the mole inside in a pot and cook down the ingredients into a thicker paste.

Then blend with an immersion blender or standard blender (carefully).

Prep your pork tenderloins by patting them dry and removing any silver skin.

Use a little mole sauce to very lightly coat the tenderloins. This helps your spice rub to stick!

Place both the tenderloins and the prepared mole onto your smoker and smoke low and slow for about 45 min.

Pork tenderloins are thin and cook fairly quickly, even when smoked. You want an internal temp of 145 F.

Slice the tenderloin into 1/4 inch medallions and serve with the smoked mole sauce.
