What is the reverse sear method?
Grill a steak by utilizing two-zone grilling. This is done by using indirect heat first, then searing the steak at the end before serving.

Why use this method to cook a steak?
It takes the guess work out of overcooking or undercooking your steak. Once you use this method, it's the only way you'll cook a steak!

Prep your steaks, salt them, let them come to room temp. Thick cut steaks work best.

Set your grill to a low temp and place your steak on a wire rack over a pan (to reduce mess). Steak should be placed on the cooler side of your grill that has no direct flame.

Alternatively, you can also do this in the oven if you don't have a grill as well.

Once your steak hits 110 F. Let it rest then fire up the grill to high heat and then sear each side about a minute.

I like to cook my steaks to 125 F. and then let them rest for 10-15 min for a perfect medium rare. Use a meat thermometer for accuracy!

Cooking indoors? Use a screaming hot cast iron pan instead to finish off the final sear.
