  • Spinach: Fresh spinach is preferred as it provides better texture, but you can use frozen spinach if it is thoroughly drained.
  • Green Onions: Adds a mild onion flavor without overpowering the dip – use both white and green parts.
  • Garlic Cloves: For a deep savory flavor!
  • Fresh Parsley: Fresh parsley is essential for an herbaceous flavor.
  • Cream Cheese: Make sure it is softened to room temperature for easy mixing!
  • Greek Yogurt: Adding full fat Greek yogurt adds a tangy, creamy flavor and makes the dip a bit lighter in texture. Alternatively, you can use sour cream.
  • Feta Cheese: For the best flavor, use feta cheese in brine!
  • Spices: You will need oregano, dill, salt, black pepper and red pepper flakes to season up the spanakopita dip to perfection!
  • Mozzarella Cheese: Top it all off with mozzarella cheese for a melty, gooey layer of cheese on top!

  1. Preheat & Prep: Preheat the oven to 375 F. and lightly grease a small baking dish or cast iron pan.
  2. Cook Green Onions & Spinach: In a skillet over medium heat, heat the olive oil and cook the green onions and garlic for about 2 minutes until fragrant. Add the spinach and cook for another minute to remove excess moisture. Remove from heat.
  3. Combine Additional Ingredients: In a large bowl, combine the cream cheese, Greek yogurt (or sour cream), feta, parsley, oregano, dill, salt and black pepper, and crushed red pepper flakes. Stir in the spinach mixture until well combined.
  4. Top with Mozzarella: Transfer the mixture to the prepared baking dish. Sprinkle the shredded mozzarella over the top. If adding the phyllo, crinkle the sheet over the top and brush on some melted butter (this helps with browning).
  5. Bake: Bake for 20-25 minutes until the dip is golden and bubbly. If using phyllo, toss crumbled phyllo with melted butter and scatter on top for a crispy finish.
