What Is A Palmier?
A palmier is a French pastry in the shape of a heart or palm leaf. You can find palmiers of all kinds of flavors, or simple plain palmiers. The puff pastry that is used to make palmiers is a laminated dough which means it has layers of dough and butter to create a flaky, irresistible texture in the oven.

Ingredients:
Pumpkin butter puff pastry palmiers use only 4 simple ingredients! Here’s what you’ll need:
- Puff Pastry Dough: To keep things super easy, you can use store-bought puff pastry sheets! Make sure to defrost the puff pastry until it is cold and pliable.
- Granulated Sugar: For a hint of sweetness.
- Pumpkin Pie Spice: For those classic pumpkin spice flavors!
- Pumpkin Butter (homemade)– You can also use store-bought to keep this simple!
How To Make Pumpkin Butter Puff Pastry Palmiers:
- Preheat & Prep: Preheat the oven to 400 F. Line a baking sheet with parchment paper.
- Combine Sugar & Spice: In a small bowl, combine the sugar and the pumpkin pie spice.
- Sprinkle on Counter: Sprinkle the sugar mixture onto the counter on a sheet of parchment paper in the approximate shape of the sheet of puff pastry dough. Gently unwrap the dough and place it on top of the sugar.
- Roll into the Sugar: Use a rolling pin and lightly roll out the dough pressing the sugar into the bottom of the puff pastry dough.
- Spread with Pumpkin Butter: Next, lightly cover the top in a very thin layer of the pumpkin butter. Make sure to leave the edges clear of the pumpkin butter.
- Fold: Starting from one of the longer sides, fold the pastry inward toward the venter until it reaches the middle. Repeat with the opposite side so the two sides meet in the center. The pastry should resemble a folded book.
- Final Fold: Now, fold the pastry in half along the center where the two sides meet. You should have a long log shape.
- Slice: Use a sharp knife to slice the pastry log into 1/2 inch to 3/4 inch (1.3 cm – 2 cm) thick slices. Lay each slice flat on the prepared baking sheet, leaving some space between them as they will expand during baking.
- Bake: Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the palmiers are golden brown and have puffed up. Keep a close eye on them to prevent over-browning.
- Remove & Enjoy: Remove the palmiers from the oven and let them cool on the baking sheet for a few minutes. Then transfer them to a wire cooling rack to cool completely. Serve and enjoy!
Expert Tips:
- Don’t let your puff pastry sheet get warm! Store-bought puff pastry can be found in the freezer section. Before using the puff pastry you need to let it thaw, but make sure that it stays cold so that the butter in the pastry doesn’t melt.
- Double the pumpkin butter recipe to have more on hand! Add it to oatmeal, yogurt, or even swirl some into your morning coffee.
