Supplies Needed

  • Large plastic bag or container with lid
  • Meat thermometer

Ingredients

  • Chicken Wings: Use a mix of drumettes and flats for variety. These smaller cuts absorb marinade quickly and cook evenly for the perfect balance of crispy skin and juicy meat!
  • Marinade: Use my Peruvian chicken marinade recipe containing lime juice, olive oil, garlic, cumin, paprika, and aji amarillo paste which provides authentic Peruvian flavor!
  • Dipping Sauce: As a dipping sauce, I highly recommend making my Peruvian aji verde sauce, which is a spicy, herbaceous sauce that goes well with the flavors of the Peruvian chicken wings.

Tips For Marinating

  1. Pat Wings Dry: Remove the chicken wings from the packaging and pat them dry with a paper towel.
  2. Combine with Marinade: In a medium bowl, combine all of the ingredients to build the traditional peruvian chicken marinade.
  3. Marinate: Place the chicken wings into a large plastic bag or container and pour the marinade over them so they are fully covered. Keep covered and refrigerate for 2-4 hours.
  4. Pat Dry Again Before Cooking: Remove the wings from the marinade and pat them dry lightly again with paper towels.
Traditional Peruvian Chicken Marinade

Optional Cooking Methods

Grilling (for smoky flavor):

  1. Preheat: Preheat the grill to medium-high indirect heat (around 400°F).
  2. Grill: Place wings on the grill and cook for 20-25 minutes, turning occasionally, until golden brown and internal temperature reaches a minimum of 165°F.
  3. Sear: For extra crispiness, move wings to direct heat for the last 2-3 minutes, watching carefully to avoid burning.

Oven Roasting

  1. Preheat: Preheat the oven to 425 F. Line a baking sheet with foil and place a wire rack on top. Arrange the wings in a single layer on the rack.
  2. Bake: Bake for 35-40 minutes, flipping halfway through, until wings are crispy and fully cooked to a minimum of 165°F.

Air Frying

  1. Preheat: Preheat the air fryer to 370 F.
  2. Air Fry: Place the wings in a single layer into the air fryer basket and cook for 12 minutes .
  3. Flip: Flip the wings over and then increase the temperature to 400 F. and cook for an additional 7-8 minutes or until crispy and the internal temperature reaches a minimum of 165°F.

Serve the Peruvian chicken wings with the Aji Verde sauce and garnish with lime wedges and chopped cilantro if desired.

What To Pair With It

These Peruvian style chicken wings make a spectacular appetizer or main course when paired with the right accompaniments. To serve as a meal, pair with a variety of sides like fries (or my low carb jicama fries), or garlic roasted potatoes, and corn on the cob. A cabbage chopped salad would also go great, to lighten things up!

If serving as an appetizer, make sure to accompany it with a whole spread! I like to pair them with grilled esquites, tostones, and some mango pineapple salsa with tortilla chips. 

No matter how you are serving them, just don’t forget that spicy green sauce on the side!
