Low Carb BBQ Pulled Pork Tacos
An easy to make, keto friendly BBQ pulled pork taco recipe! Make this low carb taco gluten free and dairy free too!
Just because you’re watching your carbs these days, doesn’t mean you have to miss out on #TacoTuesday either. You have options to still have your taco and eat your tortillas too!
As an avid griller and barbecuer these days, I’m no stranger to how amazing BBQ pulled pork can be. Marry the love of a beautifully smoked pork shoulder with my love of tacos and it’s a true food love story people!
You’ve probably seen a lot of store bought low carb tortillas on the market these days, these are definitely great options but if you’re like me and enjoy eating at least 2-3 tacos in a sitting… many of those low carb tortilla options become not so low carb anymore.
That’s why I love using my Keto Corn Tortilla recipe instead. They are so easy to make and are only 1 net carb! So enjoying a few tacos is definitely doable for me in this scenario. If you have seen me sharing my grilling and barbecue adventures over on Instagram stories often, then maybe you stopped by this post to read more on how I smoke my pork shoulders (also sometimes called a pork butt) and make them keto friendly.
Frankly, BBQ is really easy to keep keto as long as you make your own rubs and low carb barbecue sauces. Typically when I make a pork shoulder, I like to keep the rub pretty simple and classic. I usually go with some classic sea salt, black pepper, a little smoky paprika and cayenne for some spice and maybe toss in a little garlic or onion powder too.
I find this creates a nice versatile flavor with a good bark when applied evenly and prefer to smoke with a blend of mostly pecan with a splash of cherry wood for a nice color to the pork.
To prep the pork and trim off any thick areas of fat or silver skin, pat it dry, and add a small amount of mustard to the pork to act as a binder before add the even layer of spices. Smoking the pork shoulder can definitely vary. I find that because this is a long low and slow style cook, grilling overnight is best.

Once it’s cooked and tender, I just use my hands (with gloves) to shred the pork easily and quickly. Prep your Keto Tortillas, some shredded red cabbage, slice jalapenos for some heat, and some sliced radishes for a nice crunch.
Place the shredded pork on your keto corn tortilla and pile on your toppings, add a little avocado, sour cream and of course you need cilantro too to tie it all together! I love to dig right into these and serve with a side of loaded cheesy Mexican cauliflower rice and a low carb Mexican Mule cocktail too.

When the deliciousness of pulled pork and tacos come together in a perfect low carb meal!
Ingredients
- 3 cups Shredded Smoked Pulled Pork
- [10 Keto Corn Tortillas]
- 3 Radishes sliced thin
- 1 Jalapeno sliced thin
- 1 Avocado sliced thin
- 2 cups Shredded Red Cabbage
- Sour Cream
- Cilantro
Instructions
- Smoke and cook your pulled pork as needed, see notes above for smoking and instant pot directions etc.
- Make a batch of keto tortillas, place your pulled pork into the tortilla and garnish with the cabbage, avocado, radishes, jalapeno, sour cream, and a little cilantro.
