Gentleman Prefer Bee’s Knees- The Smokin’ Skinny “B” Cocktail
A grilled low carb, “skinny” Bee’s Knees martini using keto simple syrup and smoked and charred lemons for a sweet and tangy riff on a classic drink.
This week’s Bon Appeteach “Book Club” is for all the smokin’ skinny B’s out there (and the B doesn’t stand for blondes or brunettes friends). It does however, stand for delicious and for low carb friendly. So there is that.
This week’s prohibition era book and cocktail inspiration is a “skinny” riff on the classic Bee’s Knees cocktail. The classic version utilizes gin, lemon juice, and its signature honey simple syrup.
The classic version is absolutely delicious, but I wanted to create something that was low carb too. I used my Keto Simple Syrup in place of the traditional honey for this recipe and opted to use smoked ice and smoked lemons, thus the name… Smokin’ Skinny “B”.

The Smokin’ Skinny “B” Cocktail:
- 2 oz. Gin
- 1 oz. Fresh Smoked Lemon Juice
- .75 oz Keto Simple Syrup
- Lemon Peel for Garnish
Shaken, Not Stirred-
This is my keto and low carb friendly riff on a classic Bee’s Knees cocktail. I replace the honey syrup with my Keto Simple Syrup to keep the carb count low. You can still use the honey syrup in this recipe however if the carbs don’t bug ya (pun intended…).
I thought adding the addition of a smoked lemon juice would add a unique flavor profile to this simple cocktail. Use any wood you prefer and set your grill to indirect heat.
Cut the lemons in half and lay them on indirect heat on the grill grates for about 30 minutes. If you like the caramelization, before removing them from the grill, let them cook over direct heat for 1-2 minutes (this gets a lot of the juice flowing and gives it a nice pretty color too).
To make this Smokin’ Skinny “B” Cocktail, combine the simple syrup, the smoked lemon juice, and finally the gin in a cocktail shaker. Add in the (optional) cracked Smoked Ice, and shake until chilled. Double strain your Skinny “B” into a coupe or Nick & Nora glass.
Finish your drink off with a lemon peel twist and serve! Easy peasy lemon squeezy…

The Smokin' Skinny "B" Cocktail
Ingredients
- 2 oz. Gin
- 1 oz. Fresh Smoked Lemon Juice
- [.75 oz Keto Simple Syrup ]
- [Smoked Ice ]
- Lemon Peel for Garnish
Instructions
- Set your grill for 250 F and set it up for indirect heat. Add your wood of choice. Slice 1 lemon (per cocktail) in half and place over indirect heat for 30 minutes. If you like caramelization, place it over direct heat for 1-2 minutes before removing from the grill.
- In a cocktail shaker, combine the keto simple syrup, fresh smoked lemon juice, and gin. Add (optional) Smoked ice and shake until chilled. Double strain into a coupe glass or Nick & Nora glass. Garnish with a lemon peel.
