The Coffee Cake Base

- Start the Batter: In a large mixing bowl, mash the 4 ripe bananas (I like to use a potato masher but a fork works too). Stir in the sugar, egg, and melted butter.
- Add Dry Ingredients: To the wet ingredients, add the flour, baking powder, baking soda, and salt. Fold everything together so it is just mixed. Do not over-mix.
- Add to Pan: Pour the batter into the greased prepared pan and set it aside.
The Topping
- Make the Topping: In a bowl, add the cold butter (cubed), flour, and brown sugar. Use a pastry blender or pastry cutter to create a crumble with the mixture until it looks like cornmeal.
- Top the Batter: Pour the crumble mixture over the top of the batter and then sprinkle on the chocolate chips. Press them down just slightly.
- Bake: Place the coffee cake into the oven on the center rack and bake for 50-55 minutes or until the center comes out clean with a toothpick.
