Start with a whole chicken, under 4 lbs. is best so it cooks faster and the skin gets crispy.

Spatchcock or butterfly the chicken. This is key to cooking a whole bird at a higher temp and faster!

Add seasonings or marinades. Even just some olive oil, salt, pepper, and fresh herbs make for an incredible chicken!

Cook until the thickest part of the chicken reaches 165 F. The skin will be nicely golden brown and take between 60-75 min to roast.
