Prep your rack of lamb, trim the silver skin and fat etc. Remove the membrane on the back as well if needed.

Mix up the spice blend and ground coffee for the dry rub.

Use a binder and then coat the entire rack liberally in the rub.

Reverse sear on your grill on indirect heat until it hits 105 -110 F.

Remove and rest while the grill heats to over 500 F. Then directly sear both sides until it hits 125 F internally. Then let it rest before slicing.
