As a lover of all things Mexican food and my fair share of tequila cocktails; I’m always looking to add more options to my repertoire.
I recently was gifted 5 lbs. of fresh hatch chiles from my friends at Melissa’s Produce and knew I needed to incorporate them in a handful of recipes.
While I already have these delicious grilled hatch chile poppers and this smoked hatch chile dip recipe, I knew needed the perfect hatch chile-infused cocktail to bring it all together.
The real standout that makes this drink layered with flavor is this smoked hatch chili simple syrup that takes this from a good to a great recipe.

Smoke Infused Hatch Chile Simple Syrup-
To start, this cocktail really gets its flavor to shine by making my Smoked Simple Syrup recipe (keto optional) with a hatch chili infusion. Might sound complex, but it’s really not!
I prefer to smoke traditional simple or this keto simple syrup recipe on my grill while adding a sliced hatch chile to the mixture and letting it soak and infuse. Cook for two hours with a lighter smoke-flavored wood (like pecan) and then let it cool to room temperature.
Strain out the mixture to remove the pepper and the seeds. Store in a jar and add a splash of high-proof vodka to help preserve it and store in the fridge until needed.
No grill? Make a standard simple syrup (keto if desired) and just infuse it with roasted hatch chiles on the stovetop instead.
Ingredients:
Most margaritas follow the classic 3-2-1 ratio of ingredients. This works roughly around that ratio pattern but with this combo:
- 2 oz. Lime Juice + 1 oz. Smoked Hatch Chile Syrup
- 2 oz. Good Tequila (I used Anejo for this)
- 1 oz. Good Orange Liquor (I highly recommend Grand Marnier)
Combine all the lime juice, add the tequila, simple syrup, and Grand Marnier together over ice, shake well, and pour into a rocks glass.
I garnished mine with a homemade tajin salt rim, a large ice cube, and a few slices of hatch chile rings for color.

Ingredients
Hatch Chili Syrup
- 1 Hatch Chili sliced in half
- 1 cup Water
- 1 cup Sugar or sweetener of choice
Hatch Chili Margarita
- 2 oz. Anejo Tequila
- 2 oz. Lime Juice
- 1 oz. Grand Marnier
- 1 oz. Smoked Hatch Chile Simple Syrup keto optional
Instructions
Smoked Hatch Chili Syrup
- Start by making the hatch chili syrup. Combine equal parts sugar and water and one hatch chili, sliced with the seeds.
- Bring to a boil and then transfer to a smoker and smoke for 30 minutes at 250 F. You can skip the smoking step if preferred and allow the mixture to cool to room temperature before using.
Hatch Chili Margarita Cocktail
- In a cocktail shaker combine the tequila, lime juice, grand marnier, and smoked hatch chile syrup.
- Shake until chilled and strain into a rocks glass over ice. Garnish with a salt rim or homemade Tajin seasoning and add a lime wedge.
