If You’re A Bird, Then I’m A (Jungle) Bird Cocktail

Here we are friends! Another Friday, and another week of the Bon Appeteach “Book Club”! I’m kicking off week two of our Summer of Love themed book club series, with a serious classic… The Notebook. I know you love this as much as me, don’t deny it. In truth, I’m one of the least romantic, lovey-dovey, type woman in my opinion and even I appreciate the awesomeness that is this novel.
But I also appreciate a good cocktail more. #justsaying
This week’s inspiration comes from a classic tiki style cocktail, called the Jungle Bird. It was first created in the 1970’s and features a dark rum paired with campari (a little bitter) and pineapple juice (a little sweet). I was inspired to find a way to make this drink a little lower in carbs, without compromising flavor.

A (Jungle) Bird Cocktail
- 1.5 oz Dark Rum
- . 50 oz. Campari
- .50 oz. Lime Juice
- .50 oz Keto Simple Syrup
- Top with Pineapple Seltzer ( I used the sparkling ICE brand)
Shaken, Not Stirred-
I truly love a good tiki cocktail and this low carb riff on a classic Jungle Bird, doesn’t disappoint! Start with an ice shaker and your favorite clack rum (I used Gosling’s brand).
Add in the campari and the keto simple syrup and lime juice. Shake well over the ice and then strain into a glass. You can use regular pineapple juice for a non-low carb option or try the Pineapple ICE sparkling water and top the drink off to taste.
It’s bright and refreshing, not too sweet and well rounded from a slight bitterness thanks the campari. I like to garnish with three pineapple leaves and a real maraschino cherry too. I find that tiki cocktails are ideal anytime of year, but love them especially during the hot summer months. Ingredients
- 1.5 oz Black Rum I used Gosling's
- . 50 oz. Campari
- .50 oz. Lime Juice
- .50 oz Keto Simple Syrup
- Top with Pineapple Seltzer I used the sparkling ICE brand
Instructions
- In a cocktail shaker over crushed ice, combine the rum, campari, and lime juice. Shake until chilled and pour all the contents into a rocks glass. Top with the pineapple seltzer to taste and garnish with a lime wedge, pineapple leaves and a maraschino cherry.
