What Is Lavash Bread

Lavash is an Armenian flatbread that is thin and pliable. You could compare this flatbread to naan or pita bread, but they are slightly different in their textures. Lavash, just like pita or naan, is commonly used for wraps or as a bread for dipping. Luckily, you can now find lavash in most grocery stores!

I have found that it is the perfect light and crunchy foundation for making thin-crust pizza!

Supplies Needed

  • Baking Sheet or Grill Pan
  • Pizza Cutter

Ingredients

  • Lavash Bread: Use a store-bought lavash bread for ease! If you can’t find it at the store, you can use naan or pita bread instead. You can use whole wheat lavash bread for added nutrition!
  • Mozzarella Cheese: Shredded mozzarella cheese works best for this lavash pizza recipe since it melts beautifully and takes on a more neutral flavor. You can use any other cheese though that you prefer.
  • Tomato Basil Pesto: For a bunch of flavor, I used my sun dried tomato basil pesto recipe as the pizza sauce. If you prefer, you can use a classic tomato pizza sauce or my smoked tomato sauce instead.
  • Toppings: For a Mediterranean style Lavash pizza, I topped mine off with cherry tomatoes, artichoke hearts, kalamata olives, red onion, red pepper, a sprinkle of feta cheese and some fresh parsley for garnish! The toppings you use are completely up to you, but this combination was so delicious!

How to Make Lavash Flatbread Pizzas

  1. Preheat: Preheat an oven or grill to 400 F.
  2. Prepare the Lavash Base: Place the Lavash bread on a baking sheet or directly on a grill pan if grilling. Evenly spread the tomato basil pesto over the surface of the Lavash, leaving a small border around the edges.
  3. Add Toppings: Sprinkle the shredded Fontina cheese over the pesto layer. Distribute the halved cherry tomatoes, artichoke hearts, sliced Kalamata olives, red onion, and red pepper evenly across the pizza. Crumble the feta cheese on top of the other ingredients.
  4. Bake or Grill: Transfer the pizza to the oven or grill and bake for 8-10 minutes, or until the cheese is melted and bubbly, and the Lavash is crisp around the edges.
  5. Remove & Enjoy: Remove the pizza from the oven or grill, sprinkle with fresh minced parsley, slice, and serve hot.

Tips For Making Lavash Pizza

  • Watch the pizza in the oven or on the grill to avoid burning! Lavash is thin and crisps up quickly, so keep an eye on it. You want the edges to be golden brown and the cheese to be melted, which should happen after about 8-10 minutes. 
  • Grill for extra flavor! For a smoky, charred flavor, I recommend grilling the lavash pizza. It adds a unique flavor that I personally love. Just make sure the grill is preheated, and keep an eye on it to prevent burning!
  • You can adjust this lavash pizza recipe to use your own favorite pizza toppings. You can opt for a classic pepperoni pizza, or simply omit any of the ingredients that you don’t like here.

Serving and Reheating

Lavash pizza is best enjoyed fresh out of the oven or grill when the cheese is melty, and the crust is perfectly crisp. You can definitely eat this pizza all on its own, or feel free to serve it with some sides like a Armenian tabbouleh or a homemade chopped Portillos salad!

If you have leftovers, store them in an airtight container in the fridge for up to 2 days. To reheat, place the pizza in a warm oven (300 to 350 degrees F) for 5-7 minutes to regain its crispiness. You can also pop it in a toaster oven for a quick reheat—just avoid the microwave, as it will make the Lavash soggy.
