Supplies Needed

  • Large Skillet

Ingredients

  • Flour Tortillas: Use large, burrito-sized flour tortillas for the best size burritos!
  • Pork Breakfast Sausage: I like to use pork ground breakfast sausage, since it is already seasoned and super flavorful! If you prefer, you can use a different breakfast sausage like chicken.
  • Butter: To sauté the eggs and add some extra flavor.
  • Eggs: I use whole eggs. If you prefer, you can use just egg white but you will need more eggs, or use a carton.
  • Shredded Cheese: Any kind of shredded cheese works well!
  • Red Pepper: Diced red pepper adds a little bit of texture to this McDonald’s breakfast burrito recipe.
  • Green Onions: For added flavor!

How To Make A Breakfast Burrito

Preparation

  1. Prep the Hashbrowns: If you want to add hash browns, Cook 2 cups of frozen tater tots or hash browns according to package directions and set aside.
  2. Cook the Sausage: In a large skillet over medium heat, cook the ground pork sausage until no longer pink. Add in the diced red pepper and green onions and continue to cook and sauté the sausage until it is fully browned and the veggies are tender.
  3. Set Aside: Remove the sausage mixture from the pan and let it drain on a paper towel lined plate and set aside.
  4. Beat the Eggs: Beat the dozen eggs well in a large bowl. In the same pan over medium-low heat, add the butter and let it melt and coat the pan.
  5. Cook the Eggs: Pour the eggs into the pan and begin to cook and scramble. When the eggs are 3/4th of way set, add in the 2 cups of shredded cheese, salt, and pepper. Continue to cook and scramble until the eggs are set and the cheese is melted throughout.
  6. Combine the Sausage and Eggs: Pour the cooked eggs and the cooked sausage mixture into a large mixing bowl (or toss it all together in the skillet off the heat if you don’t want to dirty another bowl). Mix and combine everything very well.

Assembly and Folding

  1. Assemble: Place one large tortilla down onto a cutting board. Add about 1/2 cup or so of the sausage and egg mixture into the center of the burrito, leaving space around the edges. Add in 1/4 cup of tater tots over the top spread evenly.
  2. Fold: Fold the sides of the tortilla inwards over the filling, creating two straight edges that will help keep everything inside. With the sides folded in, fold the bottom of the tortilla up over the filling, tucking it tightly as you go. Continue rolling the burrito upwards until it’s completely wrapped, making sure the filling stays securely inside. Press gently to seal.

Toasting the Burritos

  1. Warm a Pan: Place a dry frying pan over medium heat and allow it to warm up for about 1-2 minutes. Once the pan is hot, carefully place your wrapped burrito seam-side down in the pan.
  2. Toast: Toast the burrito for 2-3 minutes on the seam side until it’s golden brown and sealed shut. Flip the burrito and toast the other side for an additional 2-3 minutes, until both sides are evenly golden and crispy.
  3. Enjoy: Remove the burrito from the pan, let it cool slightly, and enjoy!

Variations

  • Vegetarian: Swap out the sausage for sautéed bell peppers, mushrooms, and spinach. Add a sprinkle of feta cheese for a tangy twist!
  • Make it Spicy: Add a kick by incorporating diced jalapeños and pepper jack cheese. You can also drizzle some hot sauce or chipotle mayo inside the burrito for an extra burst of flavor.
  • Switch Up the Meat: Replace the sausage with crispy bacon and add slices of ripe avocado for a creamy, rich variation. A dash of lime juice can enhance the avocado’s flavor, too!

Freezing and Reheating Tips

Freezing Directions

  • Cool the Burrito: Allow the freshly made burrito to cool completely before freezing.
  • Wrap in Foil: Wrap each burrito tightly in aluminum foil, ensuring no part of the burrito is exposed. This helps prevent freezer burn and keeps the burrito fresh.
  • Label and Freeze: Place the wrapped burritos in a resealable freezer bag or airtight container, label them with the date, and store them in the freezer for up to 3 months.

Reheating Directions

  • Preheat Oven: Preheat your oven to 350°F (175°C).
  • Bake in Foil: Place the foil-wrapped burrito directly on the oven rack or a baking sheet.
  • Reheat: Bake the burrito for 30-35 minutes if reheating from frozen, or 15-20 minutes if reheating from thawed, until the burrito is heated through.
  • Serve: Carefully remove from the oven, let cool slightly, and enjoy your reheated breakfast burrito!
