Ingredients
- Croissants: Croissants will serve as our buns for these grilled shrimp rolls. You can opt for using lobster roll buns or brioche buns instead if you prefer!
- Shrimp: You can buy raw shrimp that is already deveined and peeled, or you can peel it yourself! If the shrimp is frozen, allow it to defrost in a bowl of cold water.
- Cajun Seasoning: I like to use Tony’s Cajun Seasoning, but you can use your favorite blend or opt for Old Bay!
- Olive Oil: A little bit of olive oil is needed to coat the shrimp before grilling.
- Mayo: Mayo adds a creamy texture and balances out the bold flavors of the Cajun seasoning.
- Celery: For crunch!
- Green Onions: Green onions add a light, savory flavor!
- Fresh Herbs: Freshly chopped dill and chives brighten the flavor and perfectly complement the shrimp!
- Lemon: For a hint of tanginess!
- Spices: For added flavor, add garlic powder, smoky paprika, salt, and black pepper. Be sure to taste before adding salt, since some Cajun seasonings already contain salt!
How To Grill The Shrimp
- Preheat & Prep: Preheat the grill to medium direct heat. If using wooden skewers, soak them at least 20-25 minutes before grilling.
- Prep Shrimp: Defrost and rinse the shrimp. Ensure they are peeled, deveined and the tails are removed. Pat them dry with paper towels to remove any excess moisture.
- Season: Add the shrimp to a mixing bowl and combine with the 1 tsp of your favorite Cajun seasoning blend (or sub with Old Bay) and 2 tsp of olive oil. Toss to combine so the shrimp is evenly coated.
- Skewer: Skewer the shrimp so they are secure. Pro Tip! Use two skewers to secure the shrimp to make it easier to flip and turn to prevent the shrimp from spinning.
- Grill: Once the grill is preheated, ensure the grates are clean and lightly oiled. Place the shrimp skewers directly onto the grill grates and let them cook for 2 minutes and then flip when they easily release from the grate.
- Cook Until Opaque: Continue to cook the opposite side for 2-3 minutes. The shrimp are cooked through when they turn opaque and reach an internal temperature of 145 F.
- Cool: Remove the shrimp from the grill and let them cool to room temperature.
How To Make Grilled Shrimp Rolls
- Chop the Shrimp: When the shrimp have cooled, remove them from the skewers and roughly chop the shrimp (this makes it easier to assemble the rolls). Add to a large bowl.
- Add Additional Ingredients: To the mixing bowl, add the mayo, celery, green onion, chives, dill, mayo, lemon juice, garlic powder, paprika, salt, and pepper, and mix until fully combined. Taste and adjust seasonings as needed.
- Toast Croissants: Lightly toast the croissants in a toaster or oven if desired. Cut through the middle of the croissant to create a “bun” (as pictured), and then scoop the shrimp roll salad mix into the croissant.
- Garnish: Garnish your grilled shrimp rolls with extra fresh herbs or green onion and a little paprika over the top if desired. Serve fresh and enjoy!
Variations
- Buns: Buying croissants from the store is a really good option for shrimp roll buns, but you can use any buns that you prefer! I wouldn’t use regular hot dog buns, though. Go for something a little more flavorful like brioche buns!
- Shrimp: Shrimp is a great budget-friendly option when it comes to seafood. Or, you can substitute the shrimp with langostino if you prefer! If you have a large crowd to feed, be sure to double the recipe!
- Dressing: For a lower fat dressing, you can use low-fat mayo! For a spicier dressing, add a splash of hot sauce!
