Prep everything before starting this recipe. You will want to remove the rind on the brie cheese and fully grate the gouda. Freshly grated is best for melting.
Once simmering, slowly whisk in small handfuls of the cheese into the wine. Make sure each amount melts fully before adding more. Keep the heat on low during this process.
Prep your favorite dipper to pair with brie. I love roasted veggies, toasted bread cubes or mini pretzel bites. Add dried apricots, sliced brie, smoked sausages, and nuts too.
Serve the brie fondue in a fondue pot or heavy bottom ceramic bowl (this helps it stay hot longer). Alternatively, use a mini slow cooker to keep it warm as well.
Serve with fondue forks or grill skewers (or even toothpicks) for people to dip their food into the cheese sauce. You can make the sauce ahead of time as well if needed.
