Smoked beef birria is a BBQ-inspired riff on the traditional Mexican stew recipe that can be made on your charcoal or pellet grill.

Birria is traditionally made with goat or mutton. I used beef because it's easier to find. This is a mix of chuck roast and beef short ribs. 

Start by creating a dry rub for the meat. I used salt, pepper, Mexican oregano, cumin, garlic powder, ginger, and cinnamon. 

Trim the meat (remove the fat cap) and then add olive oil to each piece. Coat all sides of the meat in the dry rub mix, and reserve a few teaspoons for the consommé. 

Let the meat sit with the rub for at least 2 hours (best overnight). Get it on your smoker at 225 F. Spray the meat with beef broth after 1 hour. 

Once the meat is on the smoker, you need to make the consommé. It's made up of dried chili's, stock, onion, tomatoes, garlic, and some vinegar. 

Start by trimming off the stems of each pepper and scraping out the inside seeds of each one. You will want to rehydrate the peppers.

Rehydration starts by adding the dried peppers to olive oil over medium heat. Please take caution when doing this and move the peppers around in the pan so they don't burn. 

Add all your birria consommé ingredients into a blender. Pour hot stock over the whole mixture and allow the peppers to soften more before blending. 

Be careful blending hot liquids (you can also do this in a pot with an immersion blender). Blend until everything is mixed and smooth. 

You can serve the consommé as is, but I highly recommend straining it to make a nice smooth broth. Discard any of the remaining solids and set it aside.

Remove the beef birria from the smoker and fully shred it with two forks. Serve this with cilantro, onions, and limes like a beef stew or make into quesabirria tacos!
