If you love a great antipasto salad, try switching things up and make this easy sausage antipasto inspired kebab for your family!

While kebabs are best grilled, you could easily adapt for a sheet pan style meal as well.

Start by prepping your antipasto veggies and items you want to add to your skewers.

I used the following: -Cherry Tomatoes - Artichoke Hearts - Red Peppers - Pepperoncini - Prosciutto

Use any style sausage you prefer (chicken, pork, beef). I use a hot Italian sausage and boiled them whole first.

Toss the other ingredients into a bowl with olive oil and some Italian seasonings.

Cut the boiled sausage into pieces and assemble and grill the kebabs so the sausages char a bit and the veggies get cooked.

Remove and serve on or off the kebabs as desired!
