Grill Friendly: While charcoal grills and fire pits make it easy to get a perfectly roasted marshmallow, not everyone may have access to one of these open fire options. This recipe is grill friendly for any style (especially if you only have a pellet grill and cannot get a traditional hot coal or open flame). 

Customizable: I love adding a variety of other toppings to my graham cracker and toasted marshmallow combination. Peanut butter cups, caramel sauce, peanut butter, and more! See below how you can mix up this classic for a fun treat for the whole family.

Supplies Needed 

Foil Pan, Aluminum foil, or Cast-iron Skillet

Ingredients

Graham Crackers: Use the classic style or a cinnamon and honey flavor. If you’d like to do something not traditional, cookies work great here as a fun option too. 

Marshmallows: I recommend using the standard-size marshmallow (avoid the jumbo or mini marshmallows for this). These will really puff up so keep that in mind. 

Chocolate Bars/ Candy Bars: Go traditional with a few Hershey’s chocolate squares or chocolate of your choice (in a pinch you could even use chocolate chips). Want to switch it up? Get fancy with some peanut butter cups, white chocolate, Oreo cookies, or caramel sauce. Use what you like here or create a smores bar for entertaining with a variety of options for your guests to customize their own.

How To Smoke Homemade Smores

Preparation: Preheat your grill or smoker to 400-425 F. Make sure the smoker is set for indirect heat. If the grill is at a lower temperature it will still work but could take additional time. 

Assembling: I like to use a disposable aluminum tray for easy cleanup up but a sheet pan or cast iron skillet works great here as well. Lay your graham cracker squares down in the pan in an even layer, leaving a little space in between. Top each square with a single marshmallow in the center. 

Smoking: Transfer the pan to the smoker grill grate and close the lid. Smoke for 4 minutes. The marshmallows will puff up and turn a nice golden brown and take on a light smoky flavor. Remove the pan from the grill momentarily.

Melt The Chocolate: To the melted marshmallows, add the chocolate of your choice and top with the second graham cracker square. Return it briefly to the smoker (about 1 minute) to just allow the chocolate to melt and get pressed into the gooey marshmallows. 

Serve: Remove the smores a second time from the smoker and transfer to a plate or serve right off the foil pan. They will go very quickly and were some of the best smores my family said they ever had!

Expert Tips and Variations

Oven Baked: If you don’t have a grill or smoker you can follow the same steps and bake these the same way in the oven for some delicious indoor smores!

Freshness: For best results make sure your marshmallows and graham crackers are both fresh.

Thin Bars: Thin chocolate bars melt faster and more evenly than thicker ones.

Different Crackers: Substitute graham crackers with chocolate chip cookies, ginger snaps, or digestive biscuits for a different crunch.

Equipment

  • Foil Pan

Ingredients

  • 12 Graham Cracker Squares (24 total squares after they are divided)
  • 12 Marshmallows
  • 12 Chocolate Squares or alternative candy

Instructions

  • Preheat the smoker or grill to 425 F. and set it for indirect heat.
  • On a foil pan or cast iron skillet, lay out the graham cracker squares in an even layer. Top each square with one marshmallow.
  • Place the pan onto the smoker grill grates and let the marshmallows smoke for 4 min. Watch them closely and do not leave the grill. The marshmallows will puff up and turn golden brown, remove the pan carefully from the smoker.
  • Carefully add a chocolate square or candy of choice to the top of the marshmallow. Add the other graham cracker half over the top.
  • Place the smores back onto the smoker for 1 additional minute to lightly melt the chocolate. After 1 minute remove the pan.
  • Serve the smores on a plate or right off the pan! They are delicious and great for serving a crowd. Enjoy!

Notes

Have fun swapping out the graham cracker for your favorite cookie or try using a peanut butter cup or cookies and cream bar in place of traditional chocolate for a fun variation.
